Seneca Falls Farmer’s Market 8/4 Report

Here’s a surprising fact; less than 3% of the typical consumer’s “food dollars” are spent on local foods. So all the hype surrounding “shop local” and “50 mile food supply” and “localvores” is still, pretty much just that; hype!But for those of us in the heartland of NY, we have a tremendous advantage over our brethren in Midtown Manhattan, or even Midtown Plaza!; local growers/producers that rival some of the best anywhere and a variety that is every bit as wonderful as that found in any “super” market.That’s what our local market is all about, that is the opportunity it presents for us and that is why in NY state we have seen local markets increase by over 20% in the past 5 years and continuing to grow. Come celebrate the inherent advantage we have in our local market and talk with the growers and producers, understand the expertise they apply to bringing you fresh food each week and buy the same food that they put on their own tables and feed their families with! Can’t get more local than that!I have been honored with the position of President of the NY State Farmer’s Market Federation, an organization dedicated to the support and growth of local farmer’s markets. And while it may seem a daunting task, given the 3% share local foods currently enjoys, I consider it both a social and economic opportunity and have seen great success in the past few months on both fronts.Thanks you all for your support of our Farmer’s Market, and Markets in every community!Here’s a summer treat for entertaining!Cucumber Sandwiches1 1/2 c. cucumber, finely chopped1/2 c. celery1 (3 oz.) softened cream cheese1/2 c. mayonnaise1 tsp. onion, grated1/4 tsp. salt1/8 tsp. pepper1 tsp. chopped parsley32 slices white sandwich bread, crusts cut offPartially peel cucumber. Remove seeds, chop pulp and drain well by squeezing in cheese cloth. If you don’t have cheese cloth, spread the pulp on paper towels and let it sit for a half hour or so.In bowl, combine and blend all ingredients (except bread). Lightly butter, or spread mayo on 16 slices of bread, this is to slow the bread’s absorbing the liquid.. Place a couple of tablespoons cucumber mixture on each slice, spread it around and cover with remaining slices. Cut diagonally across sandwiches to make 4 triangular sandwiches. Yield: 64 triangles.You may refrigerate the mixture for 4 – 5 days (covered) and make sandwiches for the week!
