Canning and Food Preservation Workshop

Seneca County Cornell Cooperative Extension is offering a canning and food preservation workshop covering the basics of canning and preserving local vegetables, fruits, and meats. Come learn how to preserve fresh produce and the science of safely canning food.  We will make dilly beans and can tomatoes at this hands-on workshop lead by certified Master Food Preservers from Cornell Cooperative Extension.  The methods of hot water bath and pressure canning will be demonstrated.  The class will be held at the Seneca County CCE office, 308 Main Street Shop Centre in Waterloo, NY.  The registration fee is $10.  To register please call Seneca CCE at 315-539-9251 or email seneca@cornell.edu.  You can also register online by visiting https://reg.cce.cornell.edu/canningworkshop_245.

 

“Here in the heart of the Finger Lakes there are endless options for buying and growing locally produced food.” said SCCCE Nutrition Resource Educator Mo Tidball. “Whether you have your own garden, shop at farmer’s markets, farm stands, U-pick sites, or visit the farms directly you will find fresh, delicious produce to enjoy this time of year.  One way to continue this bounty into the cold months is to learn food preservation techniques.”  Tidball notes that canning can help trim food budgets as it can be a safe and cost-effective method for storing food for long periods of time if the correct methods are used. Also, if you preserve it yourself it can be healthier, since you know exactly what is in it and can leave out the extra sodium and preservatives found in many commercially canned products.  The process can also preserve the vitamin and mineral content of fruits and vegetables harvested at the peak of their freshness.  Cornell Cooperative Extension Master Food Preservers will help you become familiar with food safety practices specific to canning to ensure the produce you are preserving stays safe to eat.  “You might be able to watch a YouTube video,” stated Tidball, “but this hands-on class lead by experts who can work with you and answer your questions will help you feel confident in preserving and canning foods at home.”
